What really is conscious eating?

When I co-founded the Conscious Palates Association with my fellow classmates, we wrote this mission statement together- “On a mission to evoke change through food.”

“One of the predominant values we would like to embody moving forward as an established association is inclusivity and sustainability through conscious eating. Whether it be simple daily habits, or thinking about food on a broader extent. We want you in this conversation, and we invite you to think about your roles within the society with heightened prospects.

The backbone of this association though, is as below:
Make a difference one-step at a time; one mistake at a time.

Months after the launch, the fundamental principles of what conscious eating is made themselves apparent as I was preparing for two pop-up projects here back home in Hong Kong. While this remains a highly-controversial and debated topic, to put it simply, conscious eating means making the most out of what you have with where you are.

That will look different to each of us. And it is imperative, that we as the next generation of food leaders comprehend, stay humbled and compassionate towards this, and our respective roles. In extension, the change we bring starting from the roots of our causes.

With the right approaches, a futuristic food way and kinships bounded within traditional assets can co-exist.
